Hi, I’ve heard that GSIs aren’t supposed to be asked for letters of recommendation, but I am a Spanish minor, and all of my classes are taught by GSIs. There is no professor, they are completely in charge of the course and its content. If this is the case, could they be asked to write a letter of recommendation? Thanks so much.

This is a good question, and one that I think a lot of people have. This should be fine, but it might be a good idea to have the GSI ask to department chair or other faculty-leader in the Spanish department to co-sign the letter. So, the GSI would write it and then another faculty member could co-sign. If this is not possible, I would just make sure you get additional letters of rec from your other courses from professors.
